Looking for a great holiday treat? Want to try something a little different than the norm? Then do we have a treat for you! Buckeye balls! They are peanut butter balls coated in chocolate. If that does not sound delicious, I don’t know what is!
Here is what you’ll need:
(makes about 7 dozen)
- 1 (16 ounce) jar of creamy peanut butter
- 1 cup of butter or margarine, softened
- 1 1/2 (16 ounce) packages of powdered sugar
- 2 cups (12 ounces) of semisweet chocolate morsels
- 2 tablespoons of shortening
Beat the peanut butter and butter at medium speed with an electric mixer until it is blended. Gradually add powdered sugar in, keep beating until it is blended. Then shape the mixture into 1-inch balls; chill them for 10 minutes or until they are firm. Microwave the chocolate and the shortening in a 2 quart glass bowl on HIGH for 1 1/2 minutes or until it is melted, stirring twice. Lastly dip each ball in the chocolate mixture until they are partially coated. Place them on the wax paper to harden. Make sure you store them in an airtight container. Enjoy!
